Banana Pancakes... okay it's not pancakes, but it's still delicious!

Happy Monday! This week, I thought I would do something a little different. Some of us are starting school soon, and in whatever form it may be in, My family loves breakfast and I like to have some quick options at my fingertips. So, grab your kiddos to help and try out some of these make-ahead recipes this week!

Today we are going to start with something sweet and the blog title is a little misleading.. but it's one of our fav's. Nothing beats the smell of banana bread cooking in the oven. I am going to share two printable versions of this recipe down below. In the past, I have only done the cinnamon version, but attempted the chocolate chip last night and it was definitely a hit. I will say, my preference lies with the cinnamon, but that would be my choice with anything sweet. This can easily be made the night before and even better if you have those lingering bananas that are clinging to life… you know the ones, they are all brown and gross looking in your fruit basket, because last week the kids FAUGHT over the bananas, so you replenished the highly sought after fruit and this week everyone hates them… those bananas. So take those overly ripened wonders, mash em’ up and make breakfast for the next few days!


What you will need:

Small loaf pan or Muffin pan

Non-stick cooking spray

Medium bowl for mixing


Ingredients: (Printable version with cinnamon option below)

  • 3-4 Medium – over ripened bananas

  • ¾ Cup sugar

  • 1 egg

  • 1 tsp vanilla

  • ¼ Cup vegetable oil

  • 1 ¼ cups All Purpose flour

  • 1 ¼ tsp baking powder

  • ½ tsp baking soda

  • Pinch of salt

  • 1 cup(ish) chocolate chips – save some to sprinkle on the top


Instructions:

  • Pre-heat oven to 350*

  • With a fork or (my preference) a potato masher, peel and mash bananas.

  • Whisk in eggs, sugar, vanilla and vegetable oil

  • Mix in flour, baking powder, baking soda and salt. (You may see some lumps, it’s okay)

  • Fold in chocolate chips

  • Pour the batter into a greased/floured loaf or muffin pan (I use Pam Baking spray – it is amazing)

  • Top with chocolate chips

  • Bake for 55 min (toothpick should come out clean)
