Today was a true test of cooking a fast meal. We had to be up and out of the house early for a doctor appointment. Enter sheet pan pancakes. This was a new recipe (well alternate way of cooking an old recipe) for me to try and I was a little apprehensive, but you guys, these turned out so good! My kids love pancakes and standing in front of a skillet flipping pancakes for 20 minutes isn’t always an option on school days, so I thought I would give this a shot. I will admit, I wanted them to look a little prettier and to see the toppings when they came out of the oven, but I guess taste and time matters most these days. This was easy (and kinda fun) to make and everyone loved them! They are hitting the rotation for sure!
Sheet Pan Pancakes
What you will need:
Sheet pan
Non-stick cooking spray or parchment paper
Ingredients: (Printable version below)
4 Cups pancake mix (use your preferred mix, I always lean toward Bisquick)
2 Cups of milk
4 eggs
Toppings of your choice (I happened to have blueberries and chocolate chips on hand)
4 T Butter
Instructions:
Pre-heat oven to 425*
Generously grease a sheet pan (enter my favorite Baking version of PAM!)
In a large bowl. Whisk together the pancake mix, milk and eggs
Pour the batter onto the greased pan
Top with the toppings of your choice
Bake (on the center rack) for about 15 min or until the top turns a golden brown
Brush with melted butter
Serve with your favorite syrup or just eat it warm!
